I really think that I must need my Omega 3's because the last time I went to Costco I just had to buy some salmon! Unfortunately that night when it was time to cook I realized that not having it on my list meant that I did not buy the ingredients for any specific recipe and when nothing online inspired me I ended looking through my pantry and making my own glaze. It was too cold and snowy to fire up the grill so I seasoned the filet with salt and pepper then pan fried it in a little olive oil. I made sure that the salmon had some time to come down to room temperature before cooking it this time and noticed that it helped to cook it more evenly, will be doing that from now on. For my glaze, not anything too terribly crazy but we enjoyed the end result. I zested and juiced an orange, mixed that with 3 cloves of crushed minced garlic, a generous tablespoon of honey and some dried dill weed. Once one side of the salmon had seared I turned it over and began glazing generously with the orange mixture, turned it again and glazed again. It is really bad to overcook salmon so this all happened pretty quickly, I poured the rest of the orange mixture into the pan, let it caramelize a bit and then removed it from the pan. Served it with steamed broccoli and couscous. I will be making this again :)
It has been sooo long since I have posted a recipe that I wanted to share this one. I knew that my schedule would no longer be my own once becoming a mommy but dinner seems to be the thing suffering the most. The other night I had Spicy Orange Beef Stir Fry on the menu and we ended up eating tuna mac :) It happens a little more often than I want it to but it is just a part of life right now and as much as I love to cook, I would not trade it for anything!! It feels really good when I can accomplish a whole meal these days but taking care of Maddie Mae is an amazing privilege, definitely worth a few nights of tuna mac!

Maddie Mae goes to Boise
Sorry about the break from posting, last year at this time we took quite the furlough from our blog and I hope that we do better this time :)
Last weekend we took Madeline on her first trip to Boise and took our first trip with an infant. I must say she did pretty good, out of 24 hours (usually would have been 18-20) roundtrip the last hour and a half is all that she really complained about. I have a feeling it could be our most successful road trip for a long long time but will attempt to stay optimistic as we travel in the future. Aunt Connie made the trip from Oregon, Aunt Debbie hosted the whole family for the big meals and Uncle Tim hosted the three of us plus our two dogs. The two things missing were Uncle Mark in Florida and Grandma Carolyn who was sick most of the weekend. Fortunately she did feel better our last day there and we were able to get some time with her. We were also able to spend some time with our good friends the Arbons and the Shadles. It was so much fun to introduce our sweet Maddie Mae to so many people that we care about and who care about her. Over all a very successful trip!

The Dreaded Sweep
I discovered a time lapse video feature on my camera yesterday and took video of all six legs of the dreaded Montana sweep. It was bumpy so take some dramamine before watching if that sort of thing bothers you. How did we ever live without digital cameras and the internet?
